Safe Catch Tuna + Good Culture Protein Packed Biscuits

Buttery, cheesy, comforting biscuits – but with an upgrade of added protein and flavor! Safe Catch Tuna + Good Culture Cottage Cheese in these biscuits are perfect for incorporating some extra goodness into your kid’s food and they come together so easily by using your favorite boxed or pouched biscuit mix! By replacing the ‘Buttermilk’ with half milk, half cottage cheese – you’re adding tons more nutrients for everyone.

TOOLS NEEDED:

Mixing Bowl (2), Fork, Biscuit Cutter or Glass, Mixing Spoon, Whisk, Measuring Cups, Measuring Spoons, Parchment Paper, Baking Tray, Basting Brush, Small Bowl

INGREDIENTS:

  1. 2 Cups of your Favorite Buttermilk Biscuit Mix

  2. 2 eggs

  3. 1 cup butter, cubed

  4. 1/4 cup milk

  5. 1/2 cup of Good Culture 4% Whole Milk Cottage Cheese

  6. 1 can Safe Catch Wild Elite Tuna

  7. 1 cup of your favorite shredded cheese

  8. salt to taste

  9. additional flour as needed

INSTRUCTIONS:

  1. Begin by preheating your oven to 400 degrees.

  2. Begin with your wet ingredients by cracking two eggs in a bowl. Add Milk and cottage cheese and whisk together.

  3. In a separate bowl, add biscuit mixture and butter and with a fork, mash together.

  4. Open your can of Safe Catch Tuna and flake back into the can – Do Not Drain! And place parchment paper on your baking tray. Set both aside.

  5. Next, add your wet ingredients to your butter/biscuit mixture and combine well. It should be somewhat sticky.

  6. Then flour a clean surface of your kitchen counter and place your biscuit mixture on the table. Kneading a few times to incorporate once more. (This is a fun, and sometimes mess experience for the kiddos!)

  7. Next, add tuna and ¾ cheese to your biscuit mixture and knead to combine.

  8. Once all ingredients are well combined, flatten out your biscuit mixture to ¼ inch thick (or to your personal liking!). Use a biscuit cutter or glass to cut out circular biscuits.

  9. Place two biscuit “rounds” on top of one another and lay on your baking tray.

  10. Baste your biscuits with melted butter and sprinkle some salt and  extra cheese on top before baking for 10 – 12 minutes or until golden brown. Enjoy these savory biscuits! 

SERVING SUGGESTIONS:

These baking instructions could vary based on the type of mix you use. If the mixture seems too thick, add a bit more milk or if the mixture is too thin, add a little more biscuit mixture.

These savory tuna cottage cheese biscuits are best served warm from the oven, but are GREAT to make in bulk and freeze for quick and easy protein-packed, hearty after school snack or breakfast addition.
