Apple Prosciutto Galette
Ingredients:
1 premade pie crust dough
1 cup Good Culture Simply 2% cottage cheese
1/2 apple, peeled and thinly sliced
2 oz prosciutto
2 tablespoons walnuts, chopped
¼ teaspoon fresh thyme
¼ teaspoon fresh rosemary
Honey
Directions:
Preheat the oven to 350F.
Roll out the pie crust on a sheet of parchment paper with a little flour sprinkled on the parchment paper.
Add the cottage cheese (leave about 1-1.5 inch of dough around the edge. Top the cottage cheese with finely chopped fresh rosemary and fresh thyme.
Add the thinly sliced apple to the cottage cheese, top with prosciutto (tear into small pieces to make it easy to cut later). Top with walnuts.
Fold the excess dough over the cottage cheese and apple mixture to shape the galette.
Bake in a 350F oven for 30 minutes.
Once the galette is done baking, remove from the oven and drizzle with honey. Cut the galette into 6 pieces and enjoy.
**Note: to make this gluten free, buy a frozen gluten free pie crust (I found one at Trader Joe’s and Whole Foods Market). Defrost the pie on the counter, then remove the dough from the aluminum pan and roll into a ball. On a floured surface, use your hands to press the dough out into a pie shape, then use the rolling pin to finish rolling out the dough.
