Your favorite afterschool snack just got an upgrade! Made with only a few ingredients and ready in 30 minutes, this is the perfect comfort snack to enjoy at anytime of the day. Top your bagel bites with your favorite tomato sauce, Good Culture cottage cheese, and toppings of your choice for the perfect bagel.
Serving Size: 32 mini bagel bites
Ingredients:
- 2 ½ cup of all-purpose flour (300 grams) + extra for rolling
- 3 teaspoons baking powder
- 1 teaspoon salt
- 3cups of Good Culture cottage cheese (660grams) divided
- ½ cup of egg or egg white, beaten
- 1 cup of tomato sauce of choice
- Parmesan cheese
- Fresh chopped parsley
Instructions:
- Preheat the oven to 375 degrees. Line a half sheet baking pan with parchment and set aside.
- Add the all-purpose flour, baking powder and salt into a large bowl and whisk till combined. Set aside.
- Blitz the cottage cheese in a blender or food processor until smooth.
- Pour the blended cottage cheese into the flour mixture and mix with a rubber spatula.
- Once the dough starts to come together use your hands to knead the dough until it becomes a cohesive dough.
- Cut the dough into 16 sections using a bench scraper.
- Shape each dough piece into a small round ball and gently press your thumbs in the center to form a bagel. If needed dust the dough with a little more flour if sticky. Once shaped place on the parchment. Repeat to all pieces of dough. You should have 16 small bagels.
- Brush each bagel with egg wash. Try to get the bottoms as well to ensure they brown too.
- Place the bagels pack onto the parchment and let them bake for about 20 minutes or just until golden brown and crisp.
- While the bagels cool, increase the oven temperature to 400 degrees.
- Once the bagels are cooled, slice them and spoon on some tomato sauce of your choice and a dollop of Good Culture cottage cheese and bake for 10-15 minutes until the cheese is melted, bubbly and slightly golden around the edges! Sprinkle with some parmesan and fresh parsley and enjoy!
