Enjoy an incredibly creamy, better-for-you caesar salad dressing. We swap mayonnaise for Good Culture cottage cheese for some added protein and blend it with tempered garlic, freshly grated parmesan and a hint of mustard for ultimate flavor. Each bite is perfectly crispy, crunchy, and creamy!
Ingredients:
- 2 tablespoons olive oil
- 3 garlic cloves minced
- ½ cup Good Culture cottage cheese
- ¼ cup mayonnaise
- 1 tablespoon fresh lemon juice
- 1 tsp dijon mustard
- ¼ teaspoon salt
- ½ teaspoon fresh cracked black pepper
- ⅓ cup grated parmesan
Instructions:
- Heat up a few tablespoons of olive oil in a pan and toss the minced garlic until no longer raw, less than a minute. Set aside.
- Add the cottage cheese, the olive oil garlic mixture, mayonnaise, lemon juice, mustard, salt, black pepper, caper brine and grated parmesan into a food processor and blitz until smooth and combined. Add a bit of water if needed to achieve the consistency you like.
- Toss your greens of choice with the dressing, along with croutons and parmesan. Enjoy!
