Meet your new high-protein, low carb lunch: Caprese Cottage Cheese Flatbread. This easy blender batter flatbread bakes up golden and flexible (with no flour needed) thanks to 2% cottage cheese and eggs seasoned with garlic and Italian herbs.

Ingredients
• 1 cup of Good Culture Simply 2% Cottage Cheese (220 grams)
• 2 eggs
• Salt to taste
• ½ teaspoon garlic powder
• ½ teaspoon Italian seasoning
Wrap Filling
• 1 teaspoon Calabrian Chili paste
• Mozzarella slices
• Grape Tomatoes, sliced
• Fresh Basil Leaves
• Bell Peppers, sliced
• Microgreens
Method
1. Preheat the oven to 350 degrees. Grease and line a 1/8th baking pan with parchment and set aside.
2. Blitz all the flatbread ingredients in a blender or food processor until ultra-smooth.
3. Pour the flatbread batter into the prepared pan. Bake for about 20 minutes or just until the flatbread begins to brown and is no longer jiggly in the pan.
4. Pull the flatbread out, letting it cool for a few minutes.
5. Pull the flatbread off the parchment gently and place on a clean surface to assemble the wrap.
6. Arrange the wrap fillings to your liking and gently fold the flatbread until you have a burrito like shape.
7. You can wrap this in parchment and slice for the perfect to go wrap or slice and enjoy right away.
