Cheesy Crackers

Ingredients:

  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 1 1/2 cups all-purpose flour
  • 1/4 cup unsalted butter, softened
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon paprika (optional, for color and flavor)
  • Sea salt for sprinkling

Directions:

  1. Preheat your oven to 375°F. Line a baking sheet with parchment paper

2. In a food processor, blend the cottage cheese until smooth.  Add the shredded cheddar cheese, flour, butter, salt, baking powder, and paprika. Pulse until the mixture forms a dough.  If the dough is too sticky, add a little more flour, one tablespoon at a time, until it is workable.

3. Divide the dough into two portions. On a lightly floured surface, roll out each portion to about 1/8 inch thickness.

4. Use a pizza cutter or sharp knife to cut the dough into small squares (about 1 inch each).

5. Transfer the squares to the prepared baking sheet. Use a toothpick or skewer to poke a small hole in the center of each square.  Sprinkle the tops with sea salt.

6. Bake for 12-15 minutes, flipping halfway through, or until the crackers are golden brown and crispy.

7. Remove from the oven and let cool completely on a wire rack.

8. Store the crackers in an airtight container to keep them crispy.
