Chicken Caesar Wrap

This crunchy, creamy, garlicky chicken caesar wrap will be your new go-to lunch option. Mayo gets subbed for Good Culture cottage cheese, which keeps the wrap creamy while adding a protein boost. Each bite is a perfect balance of crisp romaine, tender chicken, and crunchy breadcrumbs.

Servings: 2 wraps

Ingredients:

Caesar Cottage Cheese Dressing

  • 1 tablespoons olive oil
  • 3 garlic cloves minced
  • ½ cup Good Culture cottage cheese
  • ¼ cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon anchovy paste
  • 1 teaspoon kosher salt
  • ½ teaspoon fresh cracked black pepper
  • ⅓ cup grated parmesan
  • 2-3 tablespoons water, if needed

Herby Breadcrumbs

  • 1 tablespoon olive oil
  • ½ cup panko breadcrumbs
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon fine sea salt

For Assembling

  • 3 cups of small baby gem lettuce/romaine hearts, finely chopped
  • ⅓ cup of grated parmesan
  • 1 cup of cubed cooked chicken of choice (grilled, poached, baked)
  • 2 large burrito sized flour tortilla

Instructions:

Caesar Cottage Cheese Dressing

  1. Heat up a few tablespoons of olive oil in a pan and toss the minced garlic until no longer raw, less than a minute. Set aside.
  2. Add the cottage cheese, the olive oil garlic mixture, mayonnaise, lemon juice, mustard, salt, black pepper, caper brine and grated parmesan into a food processor and blitz until smooth and combined. Add a bit of water if needed to achieve the consistency you like.

Herby Breadcrumbs

  1. Heat up the olive oil in a medium sauce pan.
  2. Once warm, add the breadcrumbs and Italian seasoning in the oil and toast until golden.
  3. Cut the heat and set the breadcrumbs aside.

Assembly

  1. Into a large bowl, add the finely chopped lettuce.
  2. Cut the chicken into bite sized pieces and toss into the bowl.
  3. Add the ¾ of the herby breadcrumbs and ¾ of the dressing into the bowl and give everything a good mix until everything is well coated. Reserve the remaining breadcrumbs/dressing for assembly.
  4. To assemble the wrap, add the mixed salad filling in the center of each tortilla. Top with the remaining breadcrumbs and a drizzle of dressing.
  5. Roll up the wrap, slice in half and enjoy! Serve with remaining dressing for dipping!
