Ingredients:
1 cup Good Culture 2% Cottage Cheese
⅓ cup old-fashioned oats
½ cup ground flaxseed
1 cup toasted almonds, finely ground
2 Tbsp honey
½ tsp almond extract
½ tsp vanilla extract
1 cup dark or semi-sweet chocolate chips
Instructions:
1.In a large bowl, stir together the cottage cheese, honey, almond extract, and vanilla until smooth.
2.Add the oats, flaxseed, and ground almonds. Mix until fully combined and a dough forms.
3.Fold in the chocolate chips.
4.Use a small cookie scoop or spoon to portion the dough, then roll into evenly sized balls.
