Chocolate Peppermint Baked Oats

Ingredients:

  • ½ cup oats (45 grams)
  • 1 tablespoon Dutch processed cocoa powder (8 grams)
  • ½ tsp baking powder
  • ½ cup of Good Culture cottage cheese (110 grams)
  • 1 egg
  • ¼ tsp vanilla extract
  • ½ tsp peppermint extract
  • 1 tablespoon maple syrup
  • 2 tablespoons dark chocolate chunks
  • ½ teaspoon crushed peppermint candies, optional

Instructions:

  1. Preheat the oven to 350°F. Grease a ramekin or oven-safe dish with cooking spray. Set aside.
  2. In a blender combine the oats, cocoa powder, baking powder, cottage cheese, egg, vanilla extract, peppermint extract and maple syrup. Blend until mostly smooth, about 1 minute.
  3. Pour the batter into the prepared ramekin. Top with dark chocolate chunks.
  4. Bake for 15-20 minutes or just until a cake tester inserted in the center comes out with just a few moist crumbs.
  5. Top with more dark chocolate and crushed peppermint candies. Let it cool and enjoy!
