Ingredients:
- ½ cup oats (45 grams)
- 1 tablespoon Dutch processed cocoa powder (8 grams)
- ½ tsp baking powder
- ½ cup of Good Culture cottage cheese (110 grams)
- 1 egg
- ¼ tsp vanilla extract
- ½ tsp peppermint extract
- 1 tablespoon maple syrup
- 2 tablespoons dark chocolate chunks
- ½ teaspoon crushed peppermint candies, optional
Instructions:
- Preheat the oven to 350°F. Grease a ramekin or oven-safe dish with cooking spray. Set aside.
- In a blender combine the oats, cocoa powder, baking powder, cottage cheese, egg, vanilla extract, peppermint extract and maple syrup. Blend until mostly smooth, about 1 minute.
- Pour the batter into the prepared ramekin. Top with dark chocolate chunks.
- Bake for 15-20 minutes or just until a cake tester inserted in the center comes out with just a few moist crumbs.
- Top with more dark chocolate and crushed peppermint candies. Let it cool and enjoy!
