Ingredients:
Chocolate Pistachio Parfait Cup
- 1 single serve cup of Good Culture cottage cheese
- 1 tablespoon pistachio butter
- 1 teaspoon maple syrup
- 1 tablespoon of dark chocolate, melted
- 1 tablespoon of cocoa powder
- 1 teaspoon milk, optional
Toppings
- Chopped pistachios
- Melted Dark Chocolate
Instructions:
- Into a blender the cottage cheese, pistachio butter, maple syrup, vanilla extract and salt. Blend until completely smooth.
- Spoon out half of the mixture into a bowl. Set aside.
- Add the melted dark chocolate and cocoa powder into the blender and blitz until smooth and creamy. If too thick, add the milk to loosen.
- Fill up your single serve cup with all of the chocolate filling blended cottage cheese. Then sprinkle chopped pistachios. Then top off the cup with the pistachio filling. Chill for about 10 minutes in the fridge to harden the chocolate.
- Pull the cup out of the fridge and drizzle melted dark chocolate and top with chopped pistachios. Dig in and enjoy!
