Cinnamon Roll Bites with Cream Cheese Frosting

Ingredients:

For the Dough

  • ¾ cup warm milk
  • 2 ¼ tsp active dry yeast (one packet)
  • ¼ cup granulated sugar
  • 1 egg, room temperature
  • ¼ cup unsalted butter, melted
  • 3 cups all-purpose flour
  • ½ tsp salt

For the Cinnamon Filling

  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • 1 ½ tbsp ground cinnamon

For the Frosting/Dip

  • 1 (8 oz) container Good Culture Cream Cheese, softened
  • 1 cup powdered sugar
  • 1–2 tsp vanilla extract

Instructions:

  1. In a large bowl, whisk together warm milk, yeast, and sugar. Let sit 5 minutes, until foamy.
  2. Add the egg and melted butter, then mix in flour and salt.
  3. Stir until a shaggy dough forms, then knead by hand or mixer for 5–7 minutes until smooth.
  4. Place dough in a lightly oiled bowl, cover, and let rise 1–1 ½ hours, or until doubled.
  5. Mix the softened butter, brown sugar, and cinnamon together to form a paste.
  6. Roll the dough into a large rectangle (about 12×16 inches).
  7. Spread the cinnamon filling evenly across the dough.
  8. Roll tightly into a log (like classic cinnamon rolls).
  9. Slice the log into 1-inch pieces, then cut each piece in half so you have small “bite-size” rolls.
  10. Toss gently into a greased baking dish or bundt pan, keeping them close so they bake pull-apart style.
  11. Bake at 350°F (175°C) for 20–25 minutes, until puffed, golden, and the centers are cooked through.
