Coleslaw

Looking for a coleslaw recipe without mayo? This coleslaw is the creamy, high-protein side dish you didn’t know you needed. Made with Good Culture cottage cheese instead of traditional mayonnaise, this easy no-mayo coleslaw delivers all the tangy, crunchy satisfaction of the classic with a tasty upgrade.

Ingredients:

  • 1 cup of Good Culture cottage cheese (220 grams)
  • 3 tablespoons honey (60 grams)
  • 2 tablespoon apple cider vinegar (30 grams)
  • 1 tablespoon olive oil (15 grams)
  • 1 tablespoon Dijon mustard (15 grams)
  • 1 jalapeño, minced
  • ½ teaspoon salt
  • Fresh black pepper
  • 1 medium head of green cabbage, shredded (375grams, ~5cups)
  • 2-3 medium carrots, peeled & shredded (100 grams, ~1 cup)

Instructions:

  1. In a large mixing bowl, add the cottage cheese, honey, apple cider vinegar, olive oil, dijon mustard, minced jalapeño, salt and pepper. Whisk everything until fully combined.
  2. Add the shredded cabbage and shredded carrot and toss until fully coated.
  3. Wrap the bowl in plastic wrap and refrigerate for at least an hour to allow the flavors to marinate.
  4. Once marinated, serve alongside your favorite meal and enjoy!
