Ingredients:
- 1 cup of Good Culture cottage cheese (220 grams)
- 3 tablespoons honey (60 grams)
- 2 tablespoon apple cider vinegar (30 grams)
- 1 tablespoon olive oil (15 grams)
- 1 tablespoon Dijon mustard (15 grams)
- 1 jalapeño, minced
- ½ teaspoon salt
- Fresh black pepper
- 1 medium head of green cabbage, shredded (375grams, ~5cups)
- 2-3 medium carrots, peeled & shredded (100 grams, ~1 cup)
Instructions:
- In a large mixing bowl, add the cottage cheese, honey, apple cider vinegar, olive oil, dijon mustard, minced jalapeño, salt and pepper. Whisk everything until fully combined.
- Add the shredded cabbage and shredded carrot and toss until fully coated.
- Wrap the bowl in plastic wrap and refrigerate for at least an hour to allow the flavors to marinate.
