Cottage Cheese Cheesecake

Ingredients:

1 package Good Culture Cream Cheese (7oz), room temperature

16 oz package Good Culture Simply Cottage Cheese, room temperature

2 eggs, room temperature

½ cup organic raw sugar

1 tablespoon vanilla extract

Zest from 1 lemon

1 premade graham cracker crust

Directions:

Preheat the oven to 350F.

In a food processor add the room temperature cream cheese, cottage cheese, sugar, vanilla extract and lemon zest.

Blend this mixture together until the cottage cheese curd is no longer visible and the mixture is smooth.

Add the eggs and pulse to combine (don’t overmix the eggs – this can make the cheesecake crack).

Add a dish to the bottom rack of the oven and fill with at least 1 inch of water (this creates steam in the oven). 

Place the graham cracker crust on a baking sheet. Pour in the cheesecake mixture.

Bake in the oven at 350F for 45 minutes. The cheesecake will look very jiggly in the center.

Turn off the oven and crack the door and allow the cheesecake to rest in the oven for 10-15 minutes.

Remove cheesecake from oven, allow to cool on the counter then transfer to the fridge and cool completely (I like to do this overnight, but at least 2 hours is necessary).

Slice and serve.
