Cottage Cheese Crescent Rolls

Ingredients:
1 stick salted butter + 2 tablespoons (divided)
1.25 cups Good Culture Organic 2% Cottage Cheese
1 cup all purpose flour (I used 1-for-1 Gluten Free Flour) + more for dusting workstation
Instructions:
- Prepare the Dough:
- Cut cold butter into small pieces or grate it with a metal grater.
- In a large bowl, combine butter, 1 cup all-purpose flour, and 1.25 cups cottage cheese. Stir to mix.
- When stirring becomes difficult, use your hands to work the dough until all the flour is incorporated and the dough is no longer sticky (about 1-2 minutes).
- Shape into a thick disk and refrigerate for 30 minutes to 2 hours to hydrate the flour.
- Roll Out & Shape:
- Preheat the oven to 350°F.
- Remove the dough from the fridge and let it sit for 5-10 minutes.
- Lightly flour a clean surface and roll the dough into a ⅛-inch thick circle, turning and adding more flour as needed to prevent sticking.
- Cut into 15-16 triangles (like a pizza).
- Roll each triangle from the wide end to form crescent rolls.
- Bake:
- Place rolls on a parchment-lined baking sheet.
- Brush with 1-2 tablespoons of melted butter.
- Bake for 30 minutes.
- Let cool for at least 5 minutes before serving.
