Cottage Cheese Crescent Rolls

Ingredients:

1 stick salted butter + 2 tablespoons (divided)

1.25 cups Good Culture Organic 2% Cottage Cheese

1 cup all purpose flour (I used 1-for-1 Gluten Free Flour) + more for dusting workstation

Instructions:

  1. Prepare the Dough:
    • Cut cold butter into small pieces or grate it with a metal grater.
    • In a large bowl, combine butter, 1 cup all-purpose flour, and 1.25 cups cottage cheese. Stir to mix.
    • When stirring becomes difficult, use your hands to work the dough until all the flour is incorporated and the dough is no longer sticky (about 1-2 minutes).
    • Shape into a thick disk and refrigerate for 30 minutes to 2 hours to hydrate the flour.
  2. Roll Out & Shape:
    • Preheat the oven to 350°F.
    • Remove the dough from the fridge and let it sit for 5-10 minutes.
    • Lightly flour a clean surface and roll the dough into a ⅛-inch thick circle, turning and adding more flour as needed to prevent sticking.
    • Cut into 15-16 triangles (like a pizza).
    • Roll each triangle from the wide end to form crescent rolls.
  3. Bake:
    • Place rolls on a parchment-lined baking sheet.
    • Brush with 1-2 tablespoons of melted butter.
    • Bake for 30 minutes.
    • Let cool for at least 5 minutes before serving.
