Cottage Cheese Fondue
Ingredients
1 cup Good Culture Simply Cottage Cheese, blended
¾ cup swiss cheese
¾ cup Gruyère cheese
1 teaspoon tapioca starch
1 teaspoon dijon mustard
¼ teaspoon salt
Directions
Prepare the Cheese: Shred the cheese and toss it with 1 teaspoon of tapioca starch. This helps it melt smoothly.
Set Up the Double Boiler In a pot, bring water to a gentle simmer. Place a heatproof bowl on top to create a double boiler.
Blend the Cottage Cheese: Blend the cottage cheese in a blender or food processor until smooth.
Melt the Cheese Mixture: Add the blended cottage cheese, ½ cup shredded Swiss cheese, and ½ cup shredded Gruyère cheese to the double boiler. Stir continuously until the cheese is completely melted.
Add Seasoning and Remaining Cheese: Stir in a pinch of salt, 1 teaspoon Dijon mustard, and the rest of the shredded cheese. Keep stirring until the mixture is smooth and fully melted.
Transfer to Fondue Pot: Pour the cheese mixture into a fondue pot to keep it warm.
Serve: Serve with your choice of dippers like bread, roasted potatoes, roasted broccoli, roasted asparagus, fresh radish, green apple slices, and pear slices.
