protein pancakes with cottage cheese

Makes 5 large pancakes
3⁄4 cup sprouted spelt flour
1⁄4 teaspoon fine pink sea salt
1 teaspoon baking powder
4 pasture-raised eggs
2 Tablespoons pure maple syrup
1 cup Good Culture Cottage Cheese
1 teaspoon vanilla extract
For garnish: maple syrup, cottage cheese, berries


  1. Preheat a medium skillet over low heat, and lightly grease with ghee or cooking spray.

  2. In a medium bowl, whisk together the dry ingredients.

  3. In a large mixing bowl, whisk together the remaining wet ingredients.

  4. Add the dry ingredients to the wet, and stir gently until just combined.

  5. Scoop a heaping 1⁄3 cup of batter into the center of the hot pan one at a time.

  6. Cook each pancake for 2-3 minutes on each side, or until golden and cooked through.

  7. Drizzle with extra maple syrup, a dollop of cottage cheese, and berries, if desired.
