Ingredients:
For the tzatziki:
1 cup Good Culture 2% Cottage Cheese, whipped/blended until smooth
1 English cucumber, seeded, grated, and squeezed dry
1 cup fresh dill, roughly chopped
1 clove garlic, finely minced
Juice of ½ lemon
½ tsp kosher salt
For the naan:
½ cup warm water (about 110°F)
1 tsp sugar
¼ oz (1 packet) active dry yeast
⅓ cup Good Culture 2% Cottage Cheese
1 Tbsp extra virgin olive oil
4 cups all purpose flour
½ tsp kosher salt
Instructions:
For the tzatziki:
1. In a bowl, combine the whipped cottage cheese, cucumber, dill, garlic, lemon juice, and salt.
2. Stir until well mixed and adjust seasoning t o taste.
3. Chill for at least 20 minutes before serving to let the flavors meld.
For the naan:
1. In a large bowl, combine warm water, sugar, and yeast. Let sit for 10 minutes until foamy and activated.
2. Stir in the olive oil and cottage cheese.
3. Add the flour and salt, and mix until a shaggy dough forms.
4. Knead by hand or with a dough hook for 8– 10 minutes, until the dough is smooth and elastic.
5. Cover the bowl with a damp towel or plastic wrap and let the dough rise in a warm spot for 1 hour, or until doubled in size.
6. Divide the dough into 4 portions. Using your hands, press each piece into a rough circle, about 1/4 inches thick.
7. Cook on a hot cast iron skillet or grill for 1– 2 minutes per side, until blistered and golden.
Serving Tip: Brush with melted ghee or olive oil and sprinkle with flaky salt or chopped herbs for an extra layer of flavor
