Cream Cheese Brownies

Ingredients
1 stick butter, room temperature
¾ cup sugar
3 eggs, room temperature
1 teaspoon vanilla extract
½ cup almond flour
½ cup cocoa powder
Pinch salt
½ cup chocolate chips, melted
Cream Cheese Mixture:
12 oz. Good Culture Cream Cheese
1 egg, room temperature
¼ cup sugar
2 teaspoons vanilla extract
Directions
Preheat the Oven: Set your oven to 350°F.
Make the Brownie Batter:
- In a large bowl, combine 1 stick of butter and ¾ cup sugar. Use a hand mixer to blend until smooth.
- Add 2 eggs and 1 teaspoon of vanilla extract. Blend well.
- Add ½ cup almond flour, ½ cup cocoa powder, and a pinch of salt. Mix until fully combined.
- Melt ½ cup of chocolate chips in the microwave in 30-second bursts, stirring each time (about 1 minute total). Pour the melted chocolate into the bowl and mix until smooth.
Make the Cream Cheese Mixture:
- In a separate bowl, combine one package of Good Culture cream cheese (at room temperature), 1 egg, ¼ cup sugar, and 2 teaspoons of vanilla extract. Blend with a hand mixer until smooth.
- Set aside ½ cup of this cream cheese mixture for later.
Combine the Mixtures:
- Pour the remaining cream cheese mixture into the brownie batter and stir until well mixed.
- Set aside ½ cup of the combined brownie mixture for later.
Prepare the Baking Dish:
- Line an 8×8-inch baking dish with parchment paper and lightly spray with avocado oil.
- Pour the brownie batter into the baking dish, spreading it out evenly.
Add Topping and Swirl:
- Drop spoonfuls of the reserved cream cheese mixture (about 5 dollops) and reserved brownie mixture (about 5 dollops) on top of the batter.
- Use a knife to gently swirl the dollops for a marbled effect.
Bake and Cool:
- Bake for 30 minutes at 350°F. Let the brownies cool completely before cutting into squares. Enjoy!
