Garlic Herb Butter

  • ¼ cup of salted butter, melted (56 grams)
  • 1 garlic clove, finely grated
  • 1 tbsp chopped fresh chives
  • 1 tbsp chopped fresh parsley
  • 1 tsp fresh thyme leaves
  • Black pepper, to taste

  • 3.5 oz Good Culture Plain Cream Cheese, softened
  • 2 tbsps maple syrup (30 grams)
  • ¼ tsp ground cinnamon
  • Pinch of sea salt

Spicy Chili Scallion Cream Cheese Glaze

  • 3.5 oz Good Culture Plain Cream Cheese, softened
  • 1 tbsp fresh lemon juice
  • 2 scallions, thinly sliced
  • 1 ½ tsps chili oil, plus extra for drizzling
  • Salt, to taste

Instructions:

Dinner Rolls

  1. Blend the cottage cheese. Add the cottage cheese to a blender or food processor and blitz until completely smooth.
  2. Make the dough. Pour the self-rising flour into a large mixing bowl and pour in the blitzed cottage cheese in. Mix until a shaggy dough forms. Once a shaggy dough is reached, use clean hands to gently knead the dough together until it’s a cohesive ball.
  3. Chill the dough. Cover the bowl and refrigerate for at least 3 hours or up to 12 hours. This helps the dough firm up and makes it easier to handle.
  4. Preheat the oven. Once the dough has chilled, preheat the oven to 400°F.
  5. Shape the rolls. While the oven preheats, lightly flour your work surface and hands. Divide the dough into equal portions and shape into rolls. Place them on a parchment lined baking sheet, leaving space between each one. The smoother and rounder you shape the dough ball the nicer they will bake up.
  6. Add egg wash (optional): This is optional. Beat one egg until fully combined and brush the tops of each roll for a beautiful golden top.
  7. Bake for about 20–25 minutes just until the rolls are golden and cooked through. The centers should no longer be doughy, you can check this by running a toothpick through. If it comes out clean without any dough, you should be good!
  8. Cool slightly. Transfer to a wire rack and let cool for a few minutes before serving with your topping of choice.

Garlic Herb Butter

  1. Add the melted butter with the garlic, chives, parsley, thyme and pepper. Spread over warm rolls so the butter melts into the bread.

Maple Cinnamon Cream Cheese Glaze

  1. Mix the cream cheese, maple syrup cinnamon and salt until smooth and creamy. Smear over the slightly warm rolls or serve on the side as a spread.

Spicy Chili Scallion Cream Cheese Spread

  1. Mix the cream cheese, lemon juice, scallions, chili oil and salt until fully combined. Spoon over the rolls or serve on the side as a spread
