Egg Bites

Ingredients:

1 cup cottage cheese

1 cup shredded jack cheese

6 eggs

Salt, pepper, and your choice of toppings such as diced bell pepper or prosciutto bits

Directions

  1. Preheat oven to 300 F and place a large pan with water on the bottom rack. This will create steam to help cook the egg bites. 

    2. Blend cottage cheese, shredded cheese, eggs, and a pinch of salt and pepper for 30 seconds.

    3. Pour into well-greased muffin tin.

    4. Bake for 25-30 minutes. Cool for 10 minutes before gently removing.
