6 large enchiladas

  • 1 lb shredded chicken
  • 1 jar Somos Green Enchilada Sauce
  • ½ tsp corriander
  • 1 tsp cumin
  • 1 cup Good Culture cottage cheese
  • 6 8 inch flour tortillas
  • 1 cup shredded jack cheese


Mix the chicken, cottage cheese, seasoning, and 1 cup of the enchilada sauce in a bowl.  In a large baking dish, spread 2 tbsp of the sauce on the bottom and spread out.  Spread out the tortillas and evenly distribute the filling.  Gently but tightly roll the tortillas.  Place in the baking dish.  Pour the remainder of the sauce over the rolled enchiladas.  Top with the shredded cheese.  Cover with foil.  Bake at 350 for 15 minutes, remove foil, bake for another 10 minutes.
