Fajita Bake

  • 1 ½ lb diced chicken
  • 1 jar Somos Fajita Simmer Sauce
  • 1 bag frozen peppers and onions
  • 1/4 cup Good Culture Cottage Cheese
  • ½ cup shredded cheddar cheese
  • 6-8 small tortillas


Start by browning the chicken in a large skillet with oil on a higher medium heat.  Once cooked through (about 8 minutes) remove and cook the frozen pepper and onions for a few minutes.  Add back the chicken and ¾ of the simmer sauce jar.  Simmer on low.  Take the remainder of the sauce and blend with the cottage cheese.  Pour that into the chicken too.  Top with shredded cheese.  Once melted spoon into warmed tortillas.
