Warm apple cinnamon chia compote over Good Culture Simply Cottage Cheese makes a creamy, high-protein, fiber-rich fall breakfast that is naturally sweet and satisfying.

Ingredients:
- 1 large apple (Pink Lady, Granny Smith or Fuji)
- 2 tablespoons chia seeds (28 grams)
- ½ cup of apple juice or water (60 grams)
- 1 teaspoon lemon juice
- 1 tablespoon maple syrup (15 grams), extra for topping
- ½ teaspoon cinnamon
- ½ teaspoon vanilla extract
- Salt to taste

Instructions:
- Peel, core and chop your apple into bite sized pieces.
- Add the chopped apples, chia seeds, apple juice, lemon juice, maple syrup, cinnamon, vanilla extract and salt into a pot and heat on high until it reaches a boil.
- Once the mixture reaches a boil, cover the pot and let cook on low heat for about 20 minutes until soft and jammy.
- Serve the apple compote hot over a bowl of creamy Good Culture cottage cheese and top with more maple syrup if desired. Enjoy!
