Fall Breakfast Bowl with Cinnamon Apple Chia Compote

Warm apple cinnamon chia compote over Good Culture Simply Cottage Cheese makes a creamy, high-protein, fiber-rich fall breakfast that is naturally sweet and satisfying.

Serving size: 1

Ingredients:

  • 1 large apple (Pink Lady, Granny Smith or Fuji)
  • 2 tablespoons chia seeds (28 grams)
  • ½ cup of apple juice or water (60 grams)
  • 1 teaspoon lemon juice
  • 1 tablespoon maple syrup (15 grams), extra for topping
  • ½ teaspoon cinnamon
  • ½ teaspoon vanilla extract
  • Salt to taste
  • Good Culture Simply 2% Cottage Cheese

Instructions:

  1. Peel, core and chop your apple into bite sized pieces.
  2. Add the chopped apples, chia seeds, apple juice, lemon juice, maple syrup, cinnamon, vanilla extract and salt into a pot and heat on high until it reaches a boil.
  3. Once the mixture reaches a boil, cover the pot and let cook on low heat for about 20 minutes until soft and jammy.
  4. Serve the apple compote hot over a bowl of creamy Good Culture cottage cheese and top with more maple syrup if desired. Enjoy!
