flaxseed protein waffles

4 large eggs
2 cups 2% Good Culture cottage cheese
2 tablespoons ground flaxseed
1/4 cup water
2 cups rolled oats
1/2 teaspoon vanilla extract


1. heat a waffle iron to medium-high heat
2. combine eggs, Good Culture cottage chees, oats, vanilla and salt in blender until smooth
3. pour 1/2 cup of the egg mixture into the waffle iron, gently close, and cook until golden brown (about 4-5 minutes)
