Graveyard Pudding Cups

Spooky season is finally here and we have the perfect dessert to celebrate. Good Culture cottage cheese gets blended with cocoa powder and maple syrup to create a rich chocolate pudding that is creamy, decadent, and packed with protein. Layer the pudding with crushed chocolate cookie crumbs and top each cup with creepy, crawly sour candies and a cookie gravestone. This treat is perfect for Halloween parties or spooky movie nights!

Servings: 2 large cups or 4 smaller cups

Ingredients:

Toppings

  • 2 tablespoons of chopped dark chocolate (20 grams)
  • 2-4 square or oval shaped cookies
  • Gummy worms or other spooky toppings!

Chocolate Cottage Cheese Pudding Cups

  • 12 Chocolate Sandwich Cookies
  • 2 cups Good Culture cottage cheese (440 grams ~ one 16 oz tub)
  • ½ cup Dutch process cocoa powder or black cocoa powder (50 grams)
  • ¼ cup maple syrup (80 grams)

Instructions:

  1. Melt the chopped dark chocolate until liquid. Place the chocolate in a small pastry bag or plastic zip-top sandwich bag. Cut a small piece of the tip of the bag. Set aside.
  2. Make the ‘gravestones’: Take the square/oval shaped cookies and decorate the cookies with the chocolate pipping bag to write/draw ghosts or the word ‘RIP’ onto each of the cookies. Set them aside and let the chocolate harden.
  3. In a small food processor, add the chocolate sandwich cookies and blitz until the cookies become fine crumbs. This will be the ‘soil’ for your graveyard cups. Pour the crumbs into a separate bowl, set aside.
  4. Add the cottage cheese, cocoa powder and maple syrup into the mini food processor/blender and blend till fully smooth.
  5. In your desired clear glasses or bowls, sprinkle a few spoons of the chocolate cookie crumbs ‘soil’ on the bottom. Divide the chocolate cottage cheese pudding into each dish evenly between all the cups. Top off each cup with the remaining chocolate cookie crumbs ‘soil’.
  6. Press the ‘gravestone’ cookies half way into the cups to look like gravestone or ghosts. Top with gummy worms or other desired spooky toppings!
