Green Goddess Sandwich

Ingredients:

For the Sandwich:

  • Bread (use your favorite type)
  • Lettuce
  • Tomato (sliced)
  • Smoked turkey breast (sliced)
  • Green Goddess Cottage Cheese Sauce (recipe below)

For the Green Goddess Cottage Cheese Sauce:

  • 1 cup Good Culture Whole Milk Cottage Cheese (4%)
  • ½ cup fresh basil
  • ½ cup fresh herbs (such as flat-leaf parsley and dill, or your favorite combination)
  • 2 tablespoons fresh chives
  • Juice of 1 large lemon
  • 1 teaspoon salt
  • 1 teaspoon garlic powder

Instructions:

Make the Green Goddess Cottage Cheese Sauce:

  1. In a food processor or high-speed blender, combine the Good Culture cottage cheese, basil, fresh herbs, chives, lemon juice, salt, and garlic powder.
  2. Blend until smooth and the herbs are fully incorporated. This may take 2-3 minutes.
  3. Transfer the sauce to a container and set aside.

Assemble the Sandwiches:

  1. Toast the bread to your desired level of crispiness.
  2. Layer a slice of bread with lettuce, tomato slices and smoked turkey breast slices.
  3. To the other slice of bread, add a generous amount of the Green Goddess Cottage Cheese Sauce.
  4. Close the sandwich, cut in half if desired, and serve.
