Green Goddess Sandwich
Ingredients:
For the Sandwich:
- Bread (use your favorite type)
- Lettuce
- Tomato (sliced)
- Smoked turkey breast (sliced)
- Green Goddess Cottage Cheese Sauce (recipe below)
For the Green Goddess Cottage Cheese Sauce:
- 1 cup Good Culture Whole Milk Cottage Cheese (4%)
- ½ cup fresh basil
- ½ cup fresh herbs (such as flat-leaf parsley and dill, or your favorite combination)
- 2 tablespoons fresh chives
- Juice of 1 large lemon
- 1 teaspoon salt
- 1 teaspoon garlic powder
Instructions:
Make the Green Goddess Cottage Cheese Sauce:
- In a food processor or high-speed blender, combine the Good Culture cottage cheese, basil, fresh herbs, chives, lemon juice, salt, and garlic powder.
- Blend until smooth and the herbs are fully incorporated. This may take 2-3 minutes.
- Transfer the sauce to a container and set aside.
Assemble the Sandwiches:
- Toast the bread to your desired level of crispiness.
- Layer a slice of bread with lettuce, tomato slices and smoked turkey breast slices.
- To the other slice of bread, add a generous amount of the Green Goddess Cottage Cheese Sauce.
- Close the sandwich, cut in half if desired, and serve.
