healthy loaded potatoes

2 large or 4 small russet potatoes, skin scrubbed clean
1 1/2 cups Good Culture 2% cottage cheese
1/2 cup shredded sharp cheddar cheese
2 bell peppers (any color)
1 green onion, thinly sliced
3 strips of bacon, cooked and diced

directions:

1. bake potato in the oven at 450 degrees
2. once potato is crispy, cut down the center and let cool
3. add 2 tablespoons of good culture cottage cheese
4. top with bacon, cheddar, peppers and onions
