Ingredients:
- 2 medium carrots, peeled
- 1 tablespoon olive oil
- 1 tablespoon honey
- 1 cup Good Culture cottage cheese
- 2 tablespoons chopped chives
- Fresh carrots, for serving
- Salt, to taste
Instructions:
- Preheat the oven to 425°F.
- Toss the carrots with olive oil, honey, a pinch of salt, and black pepper.
- Spread on a sheet pan and roast for 25–30 minutes, until tender and caramelized.
- Let the carrots cool slightly, then pulse in a food processor until finely chopped but stilltextured.
