Honey Roasted Carrot Dip

Whether you’re enjoying a sunny picnic or weekend gathering, this dip is the perfect starter. Good Culture cottage cheese makes this dip ultra-creamy while providing a protein boost. Roasted carrots and fresh chives add depth, texture, and balance out the honey. Serve it with your favorite farmers market veggies for some extra crunch!

Ingredients:

  • 2 medium carrots, peeled
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 cup Good Culture cottage cheese
  • 2 tablespoons chopped chives
  • Fresh carrots, for serving
  • Salt, to taste

Instructions:

  1. Preheat the oven to 425°F.
  2. Toss the carrots with olive oil, honey, a pinch of salt, and black pepper.
  3. Spread on a sheet pan and roast for 25–30 minutes, until tender and caramelized.
  4. Let the carrots cool slightly, then pulse in a food processor until finely chopped but stilltextured.
  5. Fold the carrots into the Good Culture cottage cheese and stir in the chives.
  6. Taste and adjust seasoning as needed.
  7. Serve with fresh carrots for dipping.
