Meal-prep breakfast sandwiches made easy: fluffy baked eggs blended with cottage cheese, layered with melty cheese and your choice of bacon or sausage, all tucked into a perfectly toasty muffin. Ready to grab, heat, and eat.
Ingredients:
- 3 english muffins or sandwich thins
- Bacon or breakfast sausage for each sandwich
- 6 slices of cheese (cheddar or gouda are great)
- 6 eggs
- 1 cup cottage cheese
- ½ cup shredded monterey jack or pepper jack cheese
Instructions:
Blend the eggs, cottage cheese, and shredded cheese. Pour into an 8×8 baking dish. Bake at 325 for 25-30 minutes. You can also place a water bath under the baking dish for a creamier consistency. Remove and cut into 6 squares.
To assemble sandwiches, place cheese, cooked sausage or cooked bacon, egg slice, then top. Wrap and refrigerate. Place in toaster oven when ready to eat for about 8 minutes. You can also microwave or bake.
