Make Ahead Breakfast Sandwiches


  • 3 english muffins or sandwich thins
  • Bacon or breakfast sausage for each sandwich
  • 6 slices of cheese (cheddar or gouda are great)
  • 6 eggs
  • 1 cup cottage cheese
  • ½ cup shredded monterey jack or pepper jack cheese


👉Blend the eggs, cottage cheese, and shredded cheese.  Pour into an 8×8 baking dish.  Bake at 325 for 25-30 minutes.  You can also place a water bath under the baking dish for a creamier consistency.  Remove and cut into 6 squares. 

To assemble sandwiches, place cheese, cooked sausage or cooked bacon, egg slice, then top.  Wrap and refrigerate.  Place in toaster oven when ready to eat for about 8 minutes. You can also microwave or bake.
