Pecan Pie Parfait

For the pecans:

  • 1 cup pecans, chopped
  • 3 tbsp brown sugar
  • 2 tbsp butter
  • 1 tbsp maple syrup or sugar free version
  • 1 tsp vanilla extract

For the filling:

  • 1 container Good Culture Cottage Cheese
  • 2 tbsp maple syrup
  • ½ cup mascarpone
  • Graham crackers optional

Instructions:

In a small pot, add the butter, sugar, maple, and vanilla.  Once its bubbling, stir in the pecans.  Cook for a few minutes and be careful not to burn.  Remove from heat.

For the filling, blend cottage cheese, maple syrup, vanilla, and mascarpone.  In small serving bowls or cups, pour filling.  (4-5 servings).  Refrigerate to firm up, at least 30 minutes.  Top with candied pecans.  You can also add crushed graham crackers on the bottom before adding the filling.
