Pecan Pie Parfait
For the pecans:
- 1 cup pecans, chopped
- 3 tbsp brown sugar
- 2 tbsp butter
- 1 tbsp maple syrup or sugar free version
- 1 tsp vanilla extract
For the filling:
- 1 container Good Culture Cottage Cheese
- 2 tbsp maple syrup
- ½ cup mascarpone
- Graham crackers optional
Instructions:
👉In a small pot, add the butter, sugar, maple, and vanilla. Once its bubbling, stir in the pecans. Cook for a few minutes and be careful not to burn. Remove from heat.
👉For the filling, blend cottage cheese, maple syrup, vanilla, and mascarpone. In small serving bowls or cups, pour filling. (4-5 servings). Refrigerate to firm up, at least 30 minutes. Top with candied pecans. You can also add crushed graham crackers on the bottom before adding the filling.
