Ingredients
2 ¾ cups quick cooking rolled oats (220 grams)
1 cup pumpkin seeds (120 grams)
½ cup pecans halves (63 grams)
½ cup slivered almonds (60 grams)
1/3 cup extra-virgin olive oil (75 grams)
1/3 cup maple syrup (80 grams)
½ cup dark brown sugar (100 grams)
⅓ cup pure pumpkin puree (80 grams)
½ teaspoon pure vanilla extract
1½ teaspoon pumpkin spice
1 tablespoon salt
1 single serve cup of Good Culture Pumpkin & Spice Cottage Cheese
Instructions
- Line a half sheet baking sheet with parchment paper and preheat the oven to 300°F.
- In a large bowl, mix together oats, pumpkin seeds, pecan halves and slivered almonds.
- In a small sauce pan, add olive oil, maple syrup, dark brown sugar, pumpkin puree, vanilla extract, pumpkin spice and salt.
- Place the pan on the stove and bring it to medium heat. Stir the mixture until sugar has dissolved.
- Pour the warm syrup mixture over the oat mixture and mix well.
- Spread the oats on the baking sheet evenly.
- Bake the oats for 35-40 minutes in total until just lightly golden brown. Check the granola at the halfway mark and give it a mix.
- Once the granola has baked, let it cool for 30 minutes until crunchy and cool.
