Pumpkin & Spice Cottage Cheese Whip
- 2 Good Culture Pumpkin Pumpkin & Spice single serve cups
- ¼ cup powdered sugar
- ½ teaspoon pumpkin pie spice
- ½ teaspoon vanilla extract
- Pinch of salt
Pumpkin & Spice Cottage Cheese French Toast
- 1 Good Culture Pumpkin & Spice single serve cup (55 grams)
- ¼ cup milk (60 grams)
- ½ teaspoon vanilla extract
- 1 egg
- 1 teaspoon maple syrup
- Pinch of salt
- 2 extra thick slices of day-old brioche
- 1-2 tablespoons of neutral oil, for frying

Instructions:
Pumpkin & Spice Cottage Cheese Whip
- Add the cottage cheese, powdered sugar, pumpkin spice, vanilla extract and salt into a small blender and blitz until fully smooth. Transfer the mixture into a piping bag and set in the fridge to chill for 30-60 minutes to help thicken.
Pumpkin & Spice Cottage Cheese French Toast
- Into a blender, add the cottage cheese, milk, vanilla extract, egg, maple syrup and salt and blitz until everything is smooth and fully combined. Pour into a shallow dish. Set aside.
- Take the two slices of brioche bread and cut a slit into the top side of the bread, almost reaching the other side but not quite so it still stays intact like a pocket.
- Once the pumpkin spice cottage cheese whip has thickened, pipe a about a quarter portion of the cottage cheese mixture in the center until it feels nicely filled but make sure not to overstuff.
- Dip each brioche slice quickly into the custard liquid until each slice is fully saturated but not soggy. Set each slice aside as you dip the others.
- Heat up a cast iron pan to medium heat. Once hot, add the oil until it sizzles.
- Once the oil is heated, place the drenched French toast slices and let them cook until golden brown. Should be about a two minutes or so. Adjust heat so you don’t burn your French toast. Once golden flip onto the other side.
- Once fully cooked, serve the French toast with some maple syrup, powdered sugar and finish with the pumpkin spice cottage cheese whip. Enjoy!
