  • 1, 1.25-oz package freeze-dried raspberries

  • 1 ½ cups milk of choice

  • ⅓ cup chia seeds

  • 1 tablespoon raw honey, date syrup, or agave

  • ½ cup Good Culture Organic 4% Cottage Cheese

  • ½ cup fresh raspberries

  • ¼ cup fresh blueberries

  • 1. In a blender or food processor, blitz the freeze-dried raspberries into a fine powder.

  • 2. In a medium mixing bowl, whisk together the milk, chia seeds, and sweetener of choice until well combined. Add the raspberry powder, and continue mixing every minute for about 5 minutes, or until the seeds gelatinize, which will help avoid any clumping while the pudding sets.

  • 3. Cover the bowl with a clean kitchen towel or plastic wrap, and allow to set in the refrigerator for at least 1 hour, up to overnight.

  • 4. When ready to serve, divide the chia pudding between two glasses, and top each with ¼ cup cottage cheese. Decorate with berries, and serve immediately!
