Roasted Beet Dip

This eye-catching beet dip is the perfect colorful addition to any occasion. Good Culture sour cream, honey, lemon juice, and roasted beets come together to create a vibrant appetizer that’s just as delicious as it is beautiful. Top with olive oil or fresh herbs and serve with crackers for some crunch.

Ingredients

  • 2 medium beets, trimmed and scrubbed
  • 1 cup Good Culture sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon honey (to balance the earthiness)
  • 1 tablespoon lemon juice (or to taste)
  • Salt and freshly cracked pepper, to taste
  • Optional: 1 small clove garlic, finely grated

To Serve

  • Seed crackers or pita chips
  • Fresh herbs (like dill or chives), for garnish

Instructions

  1. Preheat the oven to 400°F. Wrap each beet in foil and roast on a baking sheet for 35–40 minutes, or until tender when pierced with a knife. Let cool slightly, then peel and roughly chop.
  2. In a food processor, combine roasted beets, Good Culture sour cream, olive oil, honey, lemon juice, and garlic (if using). Blend until smooth and creamy. Season with salt and pepper to taste.
  3. Taste and adjust with a little more lemon or honey as needed. Chill for 30 minutes to let the flavors meld.
  4. Transfer to a shallow bowl, drizzle with a little olive oil, sprinkle with herbs, and serve with seed crackers for crunch.
