Ingredients
- 2 cups seedless red or black grapes
- 1 ½ tablespoons olive oil
- 1 teaspoon fresh thyme leaves(plus sprigs for garnish)
- Pinch of flaky salt
- 1 teaspoon honey(optional, for extra sweetness)
- 1 cup Good Culture Cottage Cheese
- Zest of ½ lemon
- Freshly ground black pepper, to taste
- Toasted walnuts, pistachios, or hazelnuts(optional for topping)
- Crostini, crackers, or endive leaves, for serving
Instructions
- Roast the grapes: Preheat oven to 425°F (220°C). On a parchment-lined baking sheet, toss grapes with olive oil, thyme, and a pinch of flaky salt. Roast for 15–20 minutes, until grapes are softened, caramelized, and just starting to burst. Let cool slightly.
- Blend the base: In a food processor or blender, combine Good Culture cottage cheese, lemon zest, a drizzle of olive oil, and black pepper. Blend until creamy and smooth(or keep it rustic if you prefer texture).
- Assemble the dip: Spoon the whipped cottage cheese on to a shallow bowl or plate. Top with the warm roasted grapes and their pan juices. Drizzle with honey if desired.
- Finish & serve: Sprinkle with more thyme leaves and optional toasted nuts for crunch. Serve with crostini or crisp crackers.
