Roasted Grape & Thyme Dip

Indulge in the flavors of Fall with this incredibly creamy dip, perfect for any occasion or celebration. Caramelized grapes and roasted thyme are added to a base of Good Culture cottage cheese, creating a irresistibly scoopable appetizer. Finish it off with some honey or toasted nuts for some extra flavor and ultimate texture.

Ingredients

  • 2 cups seedless red or black grapes
  • 1 ½ tablespoons olive oil
  • 1 teaspoon fresh thyme leaves(plus sprigs for garnish)
  • Pinch of flaky salt
  • 1 teaspoon honey(optional, for extra sweetness)
  • 1 cup Good Culture Cottage Cheese
  • Zest of ½ lemon
  • Freshly ground black pepper, to taste
  • Toasted walnuts, pistachios, or hazelnuts(optional for topping)
  • Crostini, crackers, or endive leaves, for serving

Instructions

  1. Roast the grapes: Preheat oven to 425°F (220°C). On a parchment-lined baking sheet, toss grapes with olive oil, thyme, and a pinch of flaky salt. Roast for 15–20 minutes, until grapes are softened, caramelized, and just starting to burst. Let cool slightly.
  2. Blend the base: In a food processor or blender, combine Good Culture cottage cheese, lemon zest, a drizzle of olive oil, and black pepper. Blend until creamy and smooth(or keep it rustic if you prefer texture).
  3. Assemble the dip: Spoon the whipped cottage cheese on to a shallow bowl or plate. Top with the warm roasted grapes and their pan juices. Drizzle with honey if desired.
  4. Finish & serve: Sprinkle with more thyme leaves and optional toasted nuts for crunch. Serve with crostini or crisp crackers.
