Ingredients:
Rocky Road Cottage Cheese Cup
- 1 single serve cup of Good Culture Cottage Cheese
- 1 tablespoon of cocoa powder (8 grams)
- 1 teaspoon maple syrup (5 grams)
- 1 large marshmallow or 6 mini marshmallows
- 1 tablespoon of chopped dark chocolate (10 grams)
- 1 tablespoons of chopped toasted almonds (8 grams)
Dark Chocolate Almond Magic Shell
- 1 tablespoon of chopped dark chocolate (10 grams)
- ½ teaspoon extra virgin cold pressed coconut oil (2 grams)
- 1 teaspoon finely chopped toasted almonds (2 grams)
- Flaky Salt
Instructions:
- Into a blender the cottage cheese, cocoa powder, maple syrup, vanilla extract and salt. Blend until completely smooth.
- If using a large marshmallow, use a pair of kitchen scissor to cut it into small pieces.
- Add the marshmallow, chopped chocolate and almonds into the whipped chocolate cottage cheese mixture and give it a mix until combined.
- Fill up your single serve cup with the chocolate blended cottage cheese.
- In a small microwave safe bowl, add the dark chocolate and coconut oil.
- Microwave the dark chocolate in 15 second increments until the chocolate is just starting to melt. Give it a good stir until smooth and creamy.
- Add in the chopped toasted almonds into the chocolate and give it a mix.
- Pour the almond chocolate over the blended cottage cheese and pop it into the freezer for about 15–20 minutes and you’ll be left with a crackly chocolate topping. Break in with a spoon and enjoy!
