Sheet Pan Nachos

Get ready to make the viral sheet pan nachos everyone is obsessing over. This recipe uses a cottage cheese queso made with Good Culture cottage cheese, shredded cheese, and spices. Finish it all off with thick and creamy dollops of Good Culture sour cream that ties the entire dish together.

Serves: 2 large portions or 4 smaller portions

Ingredients:

Good Culture Cottage Cheese Queso

  • 2 cups of Good Culture cottage cheese (440 grams)
  • 2 cups shredded cheese (226grams)
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Pinch of salt, to taste
  • 2-3 tablespoons of water

Sheet Pan Nachos

  • 5 cups of sturdy tortilla chips (150 grams or ~1/2 a bag of 12 ounce bag)
  • Good Culture cottage cheese queso, recipe above
  • 1 cup of black beans, rinsed and drained (160grams, ~1 can)
  • 1 cup shredded pepper jack cheese (113grams)
  • ½ cup of diced tomatoes or homemade pico
  • 1 small jalapeño sliced
  • ⅓ cup of Good Culture sour cream (75 grams)
  • 1 avocado or ½ cup of guacamole
  • 2 tablespoons of finely chopped cilantro
  • Hot sauce, to drizzle

Instructions:

Good Culture Cottage Cheese Queso

  1. Add cottage cheese, shredded cheese and spices into a high speed blender.
  2. Blend on high speed until completely smooth. You may need to add some water to help with blending. Add just as much as you need in order to help the queso blend. Taste and adjust seasoning as needed. Set aside.

Sheet Pan Nachos

  1. Preheat the oven to 400°F.
  2. Line one quarter sheet pans with parchment and clip with oven safe clips. On the other sheet pan, spread the tortilla chips and set aside.
  3. Prep all the cold toppings like pico, jalapeño, sour cream, guacamole, cilantro and hot sauce so they’re ready as soon as the queso cheese layer is done baking.
  4. On the parchment lined sheet pan, spread the queso evenly and top with black beans and shredded cheese. Place the pan into the preheated oven for about 5 minutes or just until bubbly.
  5. Once the queso cheese layer mixture is hot melty, pull it out of the oven. Gently pour the hot cheesy mixture over the chips.
  6. Serve with the cold toppings and dig in!
