Snack Hacks: Morning Moments

Fruit Dip

Ingredients: 

  • 1 cup Good Culture cottage cheese
  • 1-2 tbsp honey (depending on sweetness preference)
  • 1 tsp vanilla extract

Instructions:

  • Cut fruit or graham crackers for dipping
  • Blend cottage cheese, honey, and vanilla until smooth. 
  • Use as a dip for fruit or graham crackers.  Great after school high protein snack!

Protein Banana Muffins

Ingredients: 

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 3 mashed very ripe bananas
  • 1/4 cup maple syrup
  • 1 cup cottage cheese
  • 1 tsp vanilla extract
  • 1/3 cup milk
  • 1 egg
  • 3 tbsp melted coconut oil

Instructions:

  • In a bowl, mix the dry ingredients.  In a larger bowl, mix the wet ingredients. 
  • Stir the dry ingredients into the wet. 
  • Grease a mini muffin pan and spoon in batter. 
  • Bake 350 for 15-18 minutes.  Longer for larger muffins
  • Makes 30-ish mini muffins.  Refrigerate or freeze extras.

Egg Bites

Ingredients:

  • 6 eggs
  • 1 cup of Good Culture cottage cheese
  • 1 cup of milk of your choice
  • Chopped bell pepper, onion, and garlic

Instructions:

  • Mix together and add to a greased cupcake dish
  • Cook for 20-30 minutes at 300 F
  • Take out of the oven and let cool, and sprinkle with green onions
