Sour Cream and Chive Potato Bake

Ingredients:

3 pounds russet potatoes, peeled

3 tablespoons butter

1 teaspoon salt

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup Good Culture organic sour cream

3 tablespoons milk

¼ cup + 2 tablespoons chopped chives, divided

½ cup cheddar cheese

Directions:

Peel and chop potatoes and add the potatoes to a pot of cold water.

Turn the heat on high and cook for 25 minutes (cook covered for the first 15 minutes)

After 25 minutes, check the potatoes for doneness (use a fork to test, it should feel easy to mash).

Drain the potatoes and add them back to the pot.

Add butter to the potatoes and mash with a fork or potato masher.

Once potatoes are mashed, add salt, garlic powder, onion powder, sour cream, milk to the potatoes and mash these ingredients together. 

Add chives and stir well until chives are well distributed.

Transfer the mashed potato mixture to a casserole dish and flatten the top with a spoon. Top with cheddar cheese and bake at 400F for 25 -30  minutes until the top is golden brown and bubbling.

Once the top is golden, remove from the oven and add an additional 1-2 tablespoons chopped chives and enjoy.
