Sour Cream Ganache

Ingredients

10 oz chocolate chips (55% cacao), melted

2 cups Good Culture Organic Sour Cream, room temperature

Directions

  1. Melt the Chocolate: Place the chocolate in a large microwave-safe bowl and melt it in 30-second intervals, stirring between each, for about 1 ½ minutes total.
  2. Incorporate the Sour Cream: Gently fold in the room-temperature sour cream until the mixture is smooth and fully combined.
  3. Serve: Enjoy as a dip for strawberries, graham crackers, or cookies, or as a topping for cupcakes and brownies.

Notes:

  • Ensure the sour cream is at room temperature to prevent the chocolate from seizing.
  • Use milk chocolate (no more than 55% cacao) for a smooth, balanced ganache. If using dark chocolate, add ¼ cup of honey after mixing in the sour cream to sweeten the ganache.
