Sour Cream & Onion Smashed Potatoes

Turn everyone’s favorite chip flavor into the ultimate side dish. These Sour Cream & Onion Smashed Potatoes are boiled, smashed, and roasted until shatteringly crisp, then piled onto a swoop of rich Good Culture sour cream mixed with chives, scallions, and golden sautéed shallots. Simple ingredients, big flavor, and perfect for weeknights, game day, or holiday spreads.

Ingredients

• 1.5 pounds of yellow baby potato

• 2 tablespoon salt

• ⅓ cup of oil

• 1 teaspoon salt

• 1 tablespoon olive oil

• 1 shallot, finely chopped

• ¼ cup of finely chopped chives, extra for garnishing

• ¼ cup of finely chopped scallions, extra for garnishing

• 1 cup Good Culture Sour Cream (240 grams)

• Paprika

• Salt

Instructions

1. Wash potatoes, add them into a large pot with enough cold water so that all the potatoes are submerged. Add the salt and bring the pot to a simmer over medium high heat. Simmer for about 20 minutes just until the potatoes are fork tender and drain.

2. Preheat the oven to 450F. Line a baking sheet with foil and drizzle some oil. Add the potatoes to the baking sheet, leaving room in between the potatoes, and use a flat sided object like a measuring cup to smash the potatoes to a 1/2″ thickness. Drizzle liberally with the rest of the oil and season with salt.

3. Roast the potatoes at 450F for 30-45 minutes until golden brown and crispy. Half way through, flip the potatoes to encourage browning on the other side.

4. While the potatoes roast, make the onion sour cream dip. In a pan, add the olive oil and add the chopped shallots. Cook down until translucent and slightly brown and crisp around the edges. Pull of the heat and spoon the onions into a medium bowl.

5. In the bowl, add the finely chopped chives, finely chopped scallions, paprika, salt and sour cream. Give everything a good mix until fully incorporated. Place the sour cream dip in the fridge until the potatoes are ready.

6. Pull the potatoes out of the oven, give them a taste and add sprinkle more salt if needed.

7. On your desired dish, spoon the sour cream and spread it with a swooping motion. Place the hot crispy potatoes on top and top with chives and scallions. If desired, sprinkle some flakey salt. Enjoy!
