This southwestern chicken salad is sweet, tangy, and just the right amount of spicy. Good Culture cottage cheese makes the dressing incredibly creamy while adding a protein boost. Prep it the night before for lunch or make fresh and enjoy for dinner.

Ingredients:
Spicy Sweet Southwest Dressing
- ¾ cup Good Culture cottage cheese
- Juice from 1 lime
- 1 tablespoon olive oil
- 2 teaspoons roasted cumin powder
- 1 teaspoon honey
- 1 teaspoon cayenne powder
- 1 teaspoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon paprika powder
- ½ teaspoon oregano
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- 2-3 tablespoons of water, as needed
For Assembling:
- 2 cups of cubed, cooked chicken of choice (grilled, poached, baked)
- 115-oz. can of black beans, drained
- 1 medium red bell pepper, diced
- 3 cups of roasted sweet corn
- 1 cup diced tomatoes
- 1 large avocado, sliced
- ½ cup of shredded pepper jack/cheddar cheese
- ¼ cup red pickled onion slices
- ¼ cup of fresh cilantro
Instructions:
- Add the cottage cheese, lime juice, olive oil, roasted cumin powder, honey, cayenne powder, apple cider vinegar, garlic powder, paprika powder, oregano, salt and black pepper. Blitz until smooth and combined. Add a bit of water if needed to achieve the consistency you like. Taste and adjust with salt as needed.
- Into a large bowl, add in all the salad components and pour the dressing on top.
- Toss everything together and enjoy!
