Spicy Breakfast Burrito

Jump-start your morning with this high-protein breakfast burrito recipe featuring Good Culture Cottage Cheese. Folding cottage cheese into soft scrambled eggs delivers an ultra creamy texture and a serious boost of protein. Layer the eggs with fiber-rich black beans, fresh chopped jalapeño, and a splash of your favorite hot sauce, then wrap it all up in a tortilla for a flavorful, nutrient dense meal.

Ingredients

2 eggs

1/4 cup of Good Culture Cottage Cheese

Ground black pepper

Salt, to taste

1/3 cup canned black beans

1 tortilla

1 Tablespoon minced jalapeno

Hot sauce, to taste

2 Tablespoon Good Culture Sour Cream

Instructions

1. In a large bowl, add the eggs, cottage cheese, black pepper and salt and whisk until fully combined.

2. Heat up a non-stick pan and grease with a little bit of oil. When warm pour the egg and cottage mixture.

3. With a rubber spatula, gently scrape sections of the eggs to the center until the eggs begin to set. Repeat this until soft folds form, about 1-2 minutes. Once cooked, set aside.

4. Heat up your black beans and season with salt, set aside.

5. In a clean pan, heat up the tortilla until just warm and soft.

6. On a clean surface, place the tortilla. Place the warmed beans just below the center, top with the scrambled eggs, top with minced jalapenos and drizzle with your favorite hot sauce.

7. Fold up the bottom of the tortilla, fold in the edges then roll up tightly. Place the folded side of the burrito on a warm pan and gently apply pressure from a spatula and toast until slightly browned. Flip the burrito and repeat.

8. Serve the burrito with Good Culture Sour Cream on the side.
