spring cottage toast with avocado, radish, microgreens, and egg

Makes 6 slices of toast
1 fresh hearty loaf of bread
16 oz Good Culture Cottage Cheese
6 pasture-raised eggs
1 watermelon radish, thinly sliced
1 avocado, thinly sliced
6 oz microgreens, rinsed
Olive oil, flaky salt, and freshly cracked pepper, to taste

directions:

  1. Preheat a large skillet over medium heat.

  2. Slice the loaf of bread into 6 pieces, and lightly toast, if desired.

  3. Fry the eggs in the skillet until desired doneness. Set aside.

  4. Spread about 3 tablespoons of cottage cheese onto each slice of toast.

  5. Arrange with radish, avocado slices, and microgreens.

  6. Top with a fried egg, and drizzle with olive oil. Sprinkle with salt and pepper.
