Wedge Salad with Bleu Cheese Dressing

Serves 4

  • 1 small head of iceberg lettuce
  • 4 slices of bacon, cooked
  • 1 cup of diced cherry tomatoes
  • 4oz blue cheese
  • ½ cup Good Culture cottage cheese
  • 1 tbsp mayo
  • Juice from ½ small lemon
  • Pinch of garlic powder, salt, and pepper


Remove any wilted outer leaves on the lettuce. Cut in half, then each half in half again to create 4 wedges. For the dressing, blend the cottage cheese, blue cheese, mayo, lemon, and seasoning. Pour dressing over wedges. Top with tomatoes, diced bacon, and extra blue cheese crumbles if you have any.
