Whipped Cottage Cheese Platter with Grilled Fruit, Arugula, & Mike’s Hot Honey


This whipped cottage cheese platter is the perfect mix of creamy, sweet, and savory. Smooth blended cottage cheese is topped with peppery arugula, caramelized grilled peaches, and a drizzle of hot honey for a flavor-packed appetizer or snack. Serve with toasted baguette or crackers for an easy, high-protein crowd-pleaser.

Ingredients

  • 2 medium peaches
  • 2 cups arugula
  • 1 tablespoon extra virgin olive oil
  • Juice of ½ medium lemon
  • Pinch of salt
  • 16 oz container Good Culture Organic Whole Milk Cottage Cheese
  • Mike’s Hot Honey (to taste)
  • Optional: Toasted baguette slices or crackers for serving

Directions

Grill the peaches: Cut 2 peaches into slices. Preheat a grill pan over medium heat for 4-5 minutes. Spray the grill pan with avocado oil. When hot add peaches and cook for 4 minutes, then flip and cook 1-2 more minutes. 

Make the arugula salad: In a bowl add the arugula, olive oil, lemon juice and salt. Toss with tongs. 

Make the whipped cottage cheese: Add the container of cottage cheese to a food processor and blend on high until smooth. 

Assemble: Add the whipped cottage cheese to a large platter. Top with arugula and grilled peaches. Drizzle this with Mike’s Hot Honey.

Enjoy with toasted baguette or crackers. Top with more hot honey.
