Whipped Honey with Pistachios and Berry Compote


  • Cottage cheese
  • Honey
  • Pistachios
  • ½ cup berries (blueberries & strawberries
  • Lemon
  • Toasted bread or crackers for serving

For the whipped cottage cheese:

Blend the cottage cheese, and honey until smooth and creamy. Add to a bowl. Top with chopped pistachios and the berry compote

For the compote:

Heat the berries in a small pan over medium heat. You can add a splash of water if it gets too dry. Cook until berries break down and you can smash them. Add a small squeeze of lemon. A splash of maple syrup if you want it sweeter.
