Whipped Honey Cottage Cheese with Pistachios and Berry Compote
Ingredients
- 1 C. Good Culture Cottage Cheese
- 1/4 C. Honey
- 1/4 C. Pistachios
- 1/4 C berries (blueberries & strawberries
- Half a Lemon
- Toasted bread or crackers for serving
For the whipped cottage cheese:
Blend the cottage cheese, and honey until smooth and creamy. Add to a bowl. Top with chopped pistachios and the berry compote.
For the compote:
Heat the berries in a small pan over medium heat. You can add a splash of water if it gets too dry. Cook until berries break down and you can smash them. Add a small squeeze of lemon. Add a splash of maple syrup if you want it sweeter.
