White Pasta with Creamy Cottage Cheese Sauce
Ingredients
1 package penne pasta (12 oz package)
1 cup Good Culture Organic Cottage Cheese (4%)
1 cup Good Culture Organic Sour Cream
1 teaspoon salt
1 teaspoon garlic powder
½ – ¾ cup pasta water
1 tablespoon butter
3 cloves garlic, finely chopped
1 cup parmesan cheese
2-3 tablespoons chopped chives
Directions
Prepare the Pasta Water: In a large pot, bring water to a boil.
Make the Cottage Cheese Sauce: In a blender or food processor, combine cottage cheese, sour cream, salt, and garlic powder until smooth.
Cook the Pasta: Add the pasta to the boiling water and cook it for 1 minute less than the package directions.
Sauté the Garlic: When you add the pasta to the water, start a large skillet over medium-low heat. Add 1 tablespoon butter and the finely chopped garlic. Sauté for 2-3 minutes until fragrant.
Add Pasta Water and Sauce: After 2-3 minutes, reserve about 1 cup of pasta water from the pot. Add ¼ cup of this water to the skillet with the garlic, along with the blended cottage cheese sauce. Stir well, then mix in 1 cup of parmesan cheese, stirring until the sauce begins to bubble. Add more pasta water, as needed, up to ¾ cup, until the sauce reaches your desired consistency.
Combine Pasta and Sauce: Once the pasta is done, drain it and add it directly to the skillet. Stir until the pasta is evenly coated with sauce, adding more pasta water if needed.
Garnish and Serve: Top with chopped chives and serve immediately.
